| White Teas |
White teas are the rarest of teas. It is called white tea because
it is the least processed of all the teas.
The tea leaves are
simply picked and withered before they are gently dried. The flavor of the
beverage is subtle and complex.
To simplify the description,
it is like a light tea: it does not have the 'green' tea taste, and is not strong in astringency as the black teas. |
White tea
is very light for its size, so when preparing, use a generous
heaping teaspoon or two. Use warm, not boiling water
fresh water to pour over the leaves.
Steep the tea 1-5 minutes…the
cooler the water the longer you may steep. Strain the tea leaves
and enjoy your tea. White tea leaves may be steeped several times |

| Green Teas |
Green teas come from the same plant as black, oolong, and white
teas, the camellia sinensis. The leaves for green tea are non-fermented
or unoxidized.
Green tea has been consumed in China for centuries,
however, in the western world it has been gaining in popularity
because of recent research on its antioxidant properties. |
One rule for green teas is to never use boiling water. It is
just to hot for the delicate leaf.
This will almost always ensure
a decent cup of tea. To make green teas, use 1 teaspoon of tea
per cup.
Pour not-quite-boiling water over the tea and let steep
2-3 minutes. Many teas may be steeped multiple times. |

Matcha is a powdered green tea traditionally used in Japanese tea ceremony (Chanoyu). It was made from tea leaves which had been covered prior to harvesting.
After harvesting, the stem and the veins are removed and only the flesh portion of the tea leaf is then processed.
It is stoneground into a fine powder which is whisked with hot water to produce a frothy cup.
This tea is sold in 1 oz. tins kept in the refrigerator.
A cooking grade is also available, it is a stronger blend which is beneficial for making sauces, ice cream, or smoothies.

or fully oxidized teas. After the initial withering process,
it is rolled to break down the cells of the leaf to expose
the leaf's enzymes to oxygen.
After full oxidation occurs,
the leaf is then finished with forced hot air. |

that fresh boiling or near boiling water be used. |
| To
prepare black teas, use 1 teaspoon per cup, add freshly boiled
